I have 3 bags of sweetened coconut flakes. Any ideas what I can make to use them up?

I just found 3 bags of coconut flakes in my pantry. Any ideas for what to make to use them up? I would rather make something a little more portable (that my husband could take into work with him - so it won't go to my waist) than coconut cake. I was thinking of coconut macaroons, but if anyone has any other ideas I would love it. I don't need recipes, just ideas. I can always Google recipes on my own. Thanks.
